Vegan Taco Bowl with Cheesy Sauce

Ingredients

  • Rice
  • Veggies
  • Guacamole
  • Tortilla crisps

Mince mix

  • 2 dl vegan mince
  • 380 g black beans
  • 1/2 package of taco spice (4 tbsp)
  • A splash of water

Paprika cheese sauce

  • 1 red pepper
  • 1 dl cashews
  • 1 dl oatmilk
  • 2-3 tbsp nutritional yeast
  • 1 tbsp lime juice
  • salt, pepper and paprika powder

Preparation

Mince mix

  1. Add the ingredients to a pan and let the taco mince heat up for a few minutes.

Paprika cheese sauce

  1. Soak the cashews in hot water for 10 minutes.

  2. Then add the cashews and the rest of the ingredients to a blender and mix until you have a smooth creamy sauce.

Assembly

  1. Cook rice according to package instructions.

  2. Assemble the bowl by adding rice, veggies, taco mince, guacamole, tortilla crisps, and topping with the paprika cheese sauce.
