Vegan Taco Bowl with Cheesy Sauce
Ingredients
- Rice
- Veggies
- Guacamole
- Tortilla crisps
Mince mix
- 2 dl vegan mince
- 380 g black beans
- 1/2 package of taco spice (4 tbsp)
- A splash of water
Paprika cheese sauce
- 1 red pepper
- 1 dl cashews
- 1 dl oatmilk
- 2-3 tbsp nutritional yeast
- 1 tbsp lime juice
- salt, pepper and paprika powder
Preparation
Mince mix
Add the ingredients to a pan and let the taco mince heat up for a few minutes.
Paprika cheese sauce
Soak the cashews in hot water for 10 minutes.
Then add the cashews and the rest of the ingredients to a blender and mix until you have a smooth creamy sauce.
Assembly
Cook rice according to package instructions.
Assemble the bowl by adding rice, veggies, taco mince, guacamole, tortilla crisps, and topping with the paprika cheese sauce.
