Danish-Style Vegan Zucchini Fritters

Ingredients

  • 2 tablespoons flax seeds
  • 7 tablespoons water
  • 600g zucchini
  • 1/2 onion
  • 2 cloves garlic
  • 7 tablespoons oats
  • 7 tablespoons breadcrumbs
  • 1 teaspoon cumin
  • Salt and pepper

Preparation

  1. Mix flax seeds and water and set aside.

  2. Wash and shred the zucchini and drain all water.

  3. Mix with chopped garlic, onions, oats, breadcrumbs, cumin, salt and pepper.

  4. Pour in the flax seeds mixture and mix well.

  5. Let it rest for 10-15 minutes in the fridge.

  6. Form the dough into small fritters shape with your hands.

  7. Cook on a pan in rapeseed oil for 4-5 minutes on each side until crispy and golden.

Serving suggestions

  1. Serve along with salads, vegetables, baked potatoes or with pitas.
