Easy Vegan Pesto Rolls for Snacking

Ingredients

  • 150g wheat flour
  • 120g wholegrain flour
  • 120ml soy milk
  • 15g fresh yeast
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp sweetener
  • pesto (as needed)

Preparation

  1. Heat up the milk just a little (20-30sec Microwave) in a bowl and add the yeast and sugar and let it rest for 3 min

  2. Mix the flours with salt and oil and add the milk

  3. Mix until you have a thick dough and let it rest for 1h

  4. Roll the dough to a 3-4mm thick layer and cover with pesto or any spread. Make a roll along the longer side

  5. Cut the roll into 2-3 cm pieces and put them on a greased baking tray

  6. Cover the rolls with a cloth and preheat the oven to 180°

  7. Bake the rolls for 30-35 min. Paint them with some oil if you like towards the end of the baking time

  8. Serve them as a snack and top them with some dried tomatoes paste or dip them in a creamy hummus
