Edamame Hummus Without Tahini

Ingredients

  • 1 bag de-shelled edamame beans
  • 1/4 cup olive oil
  • 1/4 cup water
  • 3 tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon paprika
  • 1/4 teaspoon coriander
  • 3/4 tablespoon cumin

Add-ins

  • cayenne pepper (optional, for spicy kick)
  • 1 avocado (optional, for extra creamy consistency)

Preparation

  1. Defrost the edamame beans if they are frozen, for example, in the microwave.

  2. Put all the ingredients into a food processor.

  3. Mix until the desired consistency is achieved.
