Edamame Hummus Without Tahini
Ingredients
- 1 bag de-shelled edamame beans
- 1/4 cup olive oil
- 1/4 cup water
- 3 tablespoons lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon paprika
- 1/4 teaspoon coriander
- 3/4 tablespoon cumin
Add-ins
- cayenne pepper (optional, for spicy kick)
- 1 avocado (optional, for extra creamy consistency)
Preparation
Defrost the edamame beans if they are frozen, for example, in the microwave.
Put all the ingredients into a food processor.
Mix until the desired consistency is achieved.

Top the hummus with dry roasted edamame beans for an extra crunch.
