Vegan Paleo Cookies with Almond Flour Mix

Ingredients

  • 1/2 cup simple mills pumpkin muffin and bread almond flour mix
  • 1 flax egg (1 tablespoon ground flax seeds mixed with 3 tablespoons water)
  • 4 tablespoons almond butter
  • 2 tablespoons almond milk
  • 1/4 teaspoon baking powder
  • Vegan chocolate chips
  • Hu kitchen chocolate

Preparation

  1. Prepare the flax egg by mixing 1 tablespoon ground flax seeds with 3 tablespoons water and refrigerate for 10 minutes to thicken.

  2. Once the flax egg has thickened, stir in 4 tablespoons almond butter and 2 tablespoons almond milk.

  3. Mix in 1/2 cup simple mills pumpkin muffin mix and 1/4 teaspoon baking powder to create the dough.

  4. Roll the dough into 7 flattened balls on parchment paper and top with vegan chocolate chips or Hu kitchen almond butter and puffed quinoa dark chocolate square.

  5. Bake at 350°F for 8 minutes.

  6. Note: The pumpkin mix and Hu kitchen chocolate combination is highly recommended for best results.
