Wild Blueberry Loaf Cake
Ingredients
- 1 cup wild blueberries
- 1 1/4 cups flour
- 1 tsp cinnamon
- 1 tsp vanilla powder
- 2 tbsp lemon juice
- 1/2 cup plant-based milk with 2 tsp apple cider vinegar
- 2 very ripe bananas
- 1 cup coconut sugar
- 1/2 cup melted coconut oil
- 1 tsp baking soda
- 2 tsp baking powder
Preparation
Preheat the oven to 350°F.
Grease a loaf pan.
Mix dry ingredients together really well.
Mix wet ingredients together.
Add wet to dry and mix well.
Fold in the blueberries.
Bake for 1 hour or until the center is cooked.
