Zucchini Noodles with Cheesy Sauce
Ingredients
- 4 zucchinis
- Salt (for softening)
- 1/4 cup soaked and drained sunflower seeds
- 1 soaked and drained Brazil nut
- Juice of 1/2 lemon
- Middles of the spiralized zucchini
- 1 slice yellow onion
- 2 cloves garlic
- 1/4 yellow bell pepper
- 1/4 cup nutritional yeast
- 1/4 cup water
- Truffle salt or pink Himalayan salt
- Freshly cracked pepper
Preparation
Spiralize the zucchinis and set aside the middles.
Soften the zoodles with salt, massage them, and strain the released liquid.
Blend the sauce by combining the soaked sunflower seeds, soaked Brazil nut, lemon juice, zucchini middles, yellow onion, garlic, yellow bell pepper, nutritional yeast, and water in a Vitamix.
Massage the softened zoodles with the blended sauce.
Top with truffle salt or pink Himalayan salt and freshly cracked pepper.
