Vegan Jackfruit Barbecue Sliders

Ingredients

  • 1 can jackfruit
  • 1/2 cup barbecue sauce
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 slider buns

Toppings

  • 1/4 cup sliced red onion (optional)
  • 1/4 cup sliced pickles (optional)
  • 1/4 cup coleslaw (optional)

Preparation

  1. Drain and rinse the jackfruit, then shred it and discard any tough core pieces

  2. Heat olive oil in a skillet over medium heat, then add the shredded jackfruit, garlic powder, paprika, salt, and pepper. Cook for 5 minutes, stirring occasionally

  3. Stir in the barbecue sauce, reduce heat to low, and simmer for 10 to 15 minutes until the jackfruit is tender and the sauce has thickened

  4. Toast the slider buns if desired

  5. Assemble the sliders by placing the jackfruit mixture on the bottom half of each bun and topping with red onion, pickles, and coleslaw if using
