Kid-Friendly Waffle Cup Mini Cakes

Ingredients

  • 1 can (140g drained) mandarins
  • 100g soft butter
  • 70g sugar
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 2 eggs
  • 150g all-purpose flour
  • 2 teaspoons baking powder
  • 20 ready-made waffle cups
  • 100g dark chocolate
  • a few sprinkles

Preparation

  1. Preheat oven to 180°C (convection: 160°C)

  2. Drain mandarins in a sieve

  3. Beat butter with sugar, vanilla sugar, and salt until fluffy

  4. Add eggs one at a time, beating well after each addition

  5. Mix flour with baking powder and fold into the batter

  6. Cut drained mandarins into pieces and add to the batter

  7. Place waffle cups on a baking sheet

  8. Fill waffle cups with batter using teaspoons to about 1 cm below the rim

  9. Bake for about 15 minutes

  10. Let mini cakes cool completely

  11. Chop dark chocolate coarsely and melt in a bowl over hot water bath

  12. Brush mini cakes with melted chocolate

  13. Decorate with sprinkles if desired

Tips

  1. Also delicious with other fruits. Instead of mandarins, use about 150g chopped fruits of your choice such as blueberries, apricots, or cherries
