Classic Italian Pignoli Cookies

Ingredients

  • 1 (7-ounce) tube almond paste
  • 3/4 cup granulated sugar
  • 2 large egg whites
  • 1 1/4 cups blanched almond flour
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon almond extract
  • Powdered sugar, for dusting (optional)
  • Pine nuts, for coating

Preparation

  1. Preheat oven to 350F. Line two baking sheets with parchment paper.

  2. Add sugar, almond paste, and salt to a food processor. Process until the mixture looks like wet sand.

  3. Add egg whites, almond extract, and almond flour. Process until dough is homogenous.

  4. Scoop dough into 1 tablespoon-size portions, then roll each dough ball in pine nuts.

  5. Bake for about 13 minutes, rotating halfway through.

  6. Let pignoli cookies cool completely, then dust with powdered sugar, if desired.
