Hot Cross Bun Mugcake

Ingredients

  • 40g self raising flour (I used @carrs_flour)
  • 40g any sugar
  • 40g margarine (I used light & dairy free)
  • 1 egg (vegan version below)
  • 1/3 tsp ground cinnamon
  • 1/3 tsp all spice
  • 1 tbsp sultanas

Topping

  • 2 tbsp powdered icing sugar
  • 1 tbsp water

Preparation

  1. Put marg and sugar into a large mug and mix with a spoon until smooth and creamy.

  2. Add all of the other ingredients except for the flour and mix until combined. It will look a bit curdled.

  3. Add flour and mix until smooth and creamy.

  4. Pop the mug in microwave on high for two minutes.

  5. Use a knife to ease the cake out of the mug and turn it onto a plate.

  6. Use a knife to cut the sponge in half.

  7. Mix icing sugar and water in a clean mug until smooth and runny.

  8. Drizzle icing over each sponge in a cross.

  9. Eat straight away.

Tips

  1. Make it gluten free by using gluten free flour.

  2. For a vegan version, use 40g self raising flour, 30g any sugar, 20g dairy free marg, 1 tbsp flaxseed plus 2 tbsp cold water (mix and let thicken for 10 minutes), 1/3 tsp ground cinnamon, 1/3 tsp baking powder, 1/3 tsp all spice, 1 tbsp sultanas for the main ingredients, and the same topping. Follow the same method but enjoy straight from the mug without cutting.
