2-Minute Microwave Victoria Sandwich

Ingredients

  • 40g self raising flour (gf if required)
  • 40g margarine (I use a dairy free one)
  • 40g caster sugar + extra for sprinkling
  • 1 egg (vegan version coming soon!)
  • A drop vanilla essence
  • 1 tbsp jam

Preparation

  1. Get a large mug and put all of the ingredients except the flour into it. Give it a good mix until creamy.

  2. Then add the flour and mix again until smooth and creamy - very important step.

  3. Pop it in the microwave on high for 2 minutes.

  4. Take it out and use a sharp knife to ease the cake out of the mug.

  5. Turn it out onto a plate then cut it in half using a sharp knife.

  6. Fill it with any jam, pop the top half back on and sprinkle with sugar.
