2-Minute Microwave Strawberry Cake
Ingredients
- 50g plain flour
- 1 heaped tbsp margarine
- 2 tbsp sugar
- 3 tbsp plant milk
- 1/3 tsp baking powder
- 1 tsp vanilla essence
- 3 strawberries
- Sugar for decoration
Preparation
Cream butter and sugar in a bowl.
Stir in all other ingredients until smooth and creamy. Wipe down the edges to make it neat. Prod strawberries into the mixture.
Microwave on high for 2 minutes.
Sprinkle with sugar.
Notes
For a gluten-free version, use gluten-free self-raising flour and add a pinch of xanthan gum.
