2-Minute Microwave Strawberry Cake

Ingredients

  • 50g plain flour
  • 1 heaped tbsp margarine
  • 2 tbsp sugar
  • 3 tbsp plant milk
  • 1/3 tsp baking powder
  • 1 tsp vanilla essence
  • 3 strawberries
  • Sugar for decoration

Preparation

  1. Cream butter and sugar in a bowl.

  2. Stir in all other ingredients until smooth and creamy. Wipe down the edges to make it neat. Prod strawberries into the mixture.

  3. Microwave on high for 2 minutes.

  4. Sprinkle with sugar.

Notes

  1. For a gluten-free version, use gluten-free self-raising flour and add a pinch of xanthan gum.
