Creamy Sweet Potatoes with Chickpeas and Asparagus
Ingredients
- 1 large onion cubed
- 2 cubed sweet potatoes
- 1 bunch of asparagus
- 1 cup of cooked chickpea
- 4 chopped fresh tomatoes
- 1 cup of almond milk
- 2 tablespoons of nutritional yeast
- 1 teaspoon of Himalayan salt
- 1 teaspoon of turmeric
- 1 teaspoon of ground black pepper
- 1 teaspoon of dried oregano
- 1/2 cayenne pepper
- 2 pressed garlic cloves
- coconut oil
Preparation
Cook onions and sweet potatoes in coconut oil gently for 10 minutes.
Add asparagus, chickpeas, and spices, stir and cook for about 3 minutes before adding the milk and nutritional yeast.
Cook for about 5 minutes.
Add tomatoes and garlic, stir and cook for an additional 5 minutes.
