Creamy Sweet Potatoes with Chickpeas and Asparagus

Ingredients

  • 1 large onion cubed
  • 2 cubed sweet potatoes
  • 1 bunch of asparagus
  • 1 cup of cooked chickpea
  • 4 chopped fresh tomatoes
  • 1 cup of almond milk
  • 2 tablespoons of nutritional yeast
  • 1 teaspoon of Himalayan salt
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground black pepper
  • 1 teaspoon of dried oregano
  • 1/2 cayenne pepper
  • 2 pressed garlic cloves
  • coconut oil

Preparation

  1. Cook onions and sweet potatoes in coconut oil gently for 10 minutes.

  2. Add asparagus, chickpeas, and spices, stir and cook for about 3 minutes before adding the milk and nutritional yeast.

  3. Cook for about 5 minutes.

  4. Add tomatoes and garlic, stir and cook for an additional 5 minutes.
