Hibiscus Peach Punch Cocktail
Ingredients
- 2 cups hibiscus flowers
- 4 cups water
- 1 1/4 cup dark brown sugar
- 2 tsp. vanilla extract or vanilla bean paste
- 2 cups peach juice
- 1 1/2 cups light rum
- 1/4 cup peach liqueur
- 3 cups frozen or fresh peach slices
- 1 bottle extra dry prosecco or tonic water
- Fresh mint sprigs
Preparation
Add hibiscus flowers, water, sugar, and vanilla to a medium saucepan and bring to a boil over medium-high. Once at boil, reduce to a lively simmer over medium-low. Simmer until sugar is dissolved and a deep red color appears, about 10 to 15 minutes. Drain liquid using a fine-mesh strainer and discard flowers.
Mix together peach juice, rum, peach liqueur, peach slices, and hibiscus tea in a large pitcher until well combined.
Serve the punch over ice in individual glasses with a few peach slices. Top with a prosecco or tonic float. Garnish with mint sprigs, if desired.
