Smoked Peach Margarita Cocktail
Ingredients
- 4 medium peaches, pitted and sliced in half with skins on
- 1 tablespoon butter
- 1 tablespoon brown sugar
- 2 tablespoons fresh lime juice
- 1 ounce triple sec
- 1.5 ounces tequila
- Taijin seasoning
- Fresh peach slice for garnish
- Ice cubes
Preparation
Melt 1 tablespoon of butter in an oven-proof frying pan.
Add 1 tablespoon brown sugar and dissolve it in the butter.
Add the 4 medium peaches that have been pitted and sliced in half with skins on.
Place the frying pan on the barbecue and smoke the peaches for 20 minutes at 375°F or until soft, keeping an eye to prevent burning and using indirect heat if necessary.
Flip the peaches and brown the other side.
Remove the peaches from the pan and let them cool.
Add the peaches to a blender, excluding any excess butter, and blend until smooth.
Pour the mixture through a sieve and store in a jar in the fridge to cool.
Combine 3 tablespoons of the smoked peach purée, 2 tablespoons fresh lime juice, 1 ounce triple sec, and 1.5 ounces tequila in a jar and shake well.
Salt the rim of the glass with Taijin seasoning.
Add ice cubes to the glass, pour in the drink mixture, garnish with a fresh peach slice, and enjoy.
