Meat Fatteh with Yogurt
Ingredients
- 1 kg chopped meat
- 2 small chopped onions
- 1 teaspoon whole black pepper
- 3 cinnamon sticks
- 2 bay leaves
- 1 tablespoon salt
- 2 cups short-grain rice
- 4 tablespoons corn oil
- 2 teaspoons salt
- 3 cups meat broth
Yogurt mixture
- 4 cups yogurt
- 4 crushed garlic cloves
- 1 teaspoon salt
Serving
- toasted bread
- fried pine nuts
Preparation
To boil the meat, in a large pot place about 2 liters of water, let it boil then add the meat pieces, add the onion, whole pepper, cardamom, bay leaves and cinnamon sticks, let the meat cook until done, drain the meat and keep the broth aside.
To prepare the rice, in a medium-sized pot heat the oil, add the rice then add the meat broth, let the rice cook and set it aside.
To sear the meat, in a pan heat some oil or ghee, sear the boiled meat pieces and set aside.
In a suitable serving dish, place the toasted bread, spread hot broth, then add a layer of warm or hot rice.
To prepare the yogurt, add the garlic cloves and mix well then spread it over the rice.
Spread the meat pieces over the yogurt, fry the pine nuts until golden then spread them over the fatteh and serve immediately.
