Beet & Avocado Toast

Ingredients

  • 2 slices of bread (such as ciabatta)
  • Beet hummus
  • 1/2 avocado
  • Lemon juice
  • Sesame seeds
  • Flakey salt
  • Olive oil

Preparation

  1. Generously drizzle olive oil on both sides of the slices of bread.

  2. Cook the slices of bread in a pan over medium heat for 2-3 minutes on each side, until both sides are golden in color.

  3. Spread beet hummus on each piece of toast.

  4. Thinly slice 1/2 of an avocado, then add some to each piece of toast and top with a drizzle of lemon juice, sesame seeds, and flakey salt.
