Can't Wait for the Weekend Waffles

Ingredients

  • 1 1/2 cups unsweetened plant milk
  • 1 Tablespoon ground flax seeds
  • 3 Tablespoons coconut sugar
  • 3 Tablespoons unsweetened applesauce
  • 2 teaspoons baking powder
  • 1 teaspoon cornstarch
  • 1 1/2 cups flour, I used spelt
  • 1 cup fresh or frozen fruit, optional

Preparation

  1. Preheat your waffle iron. I recommend a non-stick waffle iron if you want to keep these oil free and you like easy clean up! If you don’t have one, add oil to your griddle.

  2. In a large mixing bowl combine plant milk, flax seeds, coconut sugar, applesauce, baking powder and cornstarch and mix well. Add flour and whisk until just blended. Let batter sit for 5 minutes.

  3. Fold in optional blueberries if using and add about 1 cup of batter to your preheated waffle iron for each waffle. Cook according to directions and enjoy!
