Easy Oil-Free Vegan Waffles
Ingredients
- 1 1/2 cups unsweetened plant milk
- 1 Tablespoon ground flax seeds
- 3 Tablespoons coconut sugar
- 3 Tablespoons unsweetened applesauce
- 2 teaspoons baking powder
- 1 teaspoon cornstarch
- 1 1/2 cups flour, I used spelt
- 1 cup fresh or frozen fruit, optional
Preparation
Preheat your waffle iron. I recommend a non-stick waffle iron if you want to keep these oil free + you like easy clean up! If you don’t have one, add oil to your griddle.
In a large mixing bowl combine plant milk, flax seeds, coconut sugar, applesauce, baking powder and cornstarch and mix well.
Add flour and whisk until just blended.
Let batter sit for 5 minutes. This allows time for the flax seeds to thicken the batter.
Fold in optional fresh or frozen fruit if using.
Add about 1 cup of batter to your preheated waffle iron for each waffle.
Cook according to directions and enjoy!
