Easy Oil-Free Vegan Waffles

Ingredients

  • 1 1/2 cups unsweetened plant milk
  • 1 Tablespoon ground flax seeds
  • 3 Tablespoons coconut sugar
  • 3 Tablespoons unsweetened applesauce
  • 2 teaspoons baking powder
  • 1 teaspoon cornstarch
  • 1 1/2 cups flour, I used spelt
  • 1 cup fresh or frozen fruit, optional

Preparation

  1. Preheat your waffle iron. I recommend a non-stick waffle iron if you want to keep these oil free + you like easy clean up! If you don’t have one, add oil to your griddle.

  2. In a large mixing bowl combine plant milk, flax seeds, coconut sugar, applesauce, baking powder and cornstarch and mix well.

  3. Add flour and whisk until just blended.

  4. Let batter sit for 5 minutes. This allows time for the flax seeds to thicken the batter.

  5. Fold in optional fresh or frozen fruit if using.

  6. Add about 1 cup of batter to your preheated waffle iron for each waffle.

  7. Cook according to directions and enjoy!
