Baked Oatmeal with Berries and Maple Syrup

Ingredients

  • 1 and 3/4 cups non-dairy milk
  • 2 tablespoons flax seeds
  • 1/2 cup pure maple or agave syrup
  • 1/4 cup virgin coconut oil, melted
  • 1/4 cup unsweetened applesauce or mashed banana
  • 3 cups old-fashioned whole oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 and 1/2 cups mixed berries, fresh or frozen

Preparation

  1. Preheat the oven to 177°C and spray the baking pan with non-stick spray or a little coconut oil.

  2. Whisk all ingredients together in a large bowl and spread the mixture evenly into the baking pan.

  3. Top with nuts, seeds, and more fruit if desired.

  4. Bake for 35 minutes or longer if a drier and firmer texture is preferred.

  5. Allow to cool for 5 minutes before enjoying.
