Baked Oatmeal with Berries and Maple Syrup
Ingredients
- 1 and 3/4 cups non-dairy milk
- 2 tablespoons flax seeds
- 1/2 cup pure maple or agave syrup
- 1/4 cup virgin coconut oil, melted
- 1/4 cup unsweetened applesauce or mashed banana
- 3 cups old-fashioned whole oats
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- 1 and 1/2 cups mixed berries, fresh or frozen
Preparation
Preheat the oven to 177°C and spray the baking pan with non-stick spray or a little coconut oil.
Whisk all ingredients together in a large bowl and spread the mixture evenly into the baking pan.
Top with nuts, seeds, and more fruit if desired.
Bake for 35 minutes or longer if a drier and firmer texture is preferred.
Allow to cool for 5 minutes before enjoying.
