Healthy Oatmeal Date Cookies

Ingredients

  • 2 cups of pitted dates 250 g
  • 1/4 cup maple syrup 60 ml
  • 1/4 cup vegetable oil 60 ml
  • 1 cup quick oat flakes 100 g
  • 1 1/2 cup all-purpose flour 200 g
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp of salt (optional)

Preparation

  1. Preheat oven to 375˚F

  2. Soak the dates in boiling water for 5 minutes. Drain and transfer to a food processor. Add maple syrup, oil and blend.

  3. Add quick oat flakes, all-purpose flour, ground ginger, ground cinnamon, salt and process.

  4. Roll into 8 balls; place, 4 inches apart, on baking sheet lined with parchment paper. Flatten with fork. Bake for 12 to 15 minutes.
