Crunchy Almond Cookies with Oats and Dates

Ingredients

  • 100 g pitted dates
  • 1/3 cup boiling water (85 ml)
  • 1 egg
  • 3 tbsp. maple syrup
  • 3 tbsp. coconut oil, melted
  • 1 tsp vanilla essence
  • 1 1/4 cups rolled oats
  • 1/2 cup flaked almonds
  • 1/4 cup desiccated coconut
  • 1/2 cup raisins
  • 3/4 cup almond meal
  • 1/2 tsp baking powder

Preparation

  1. Preheat oven to 180ºC.

  2. Line a baking tray with parchment paper.

  3. Place roughly chopped dates in a bowl of water and let them soak for 10 minutes.

  4. Later, mash them with a fork to create a paste and add the remaining wet ingredients, then mix well.

  5. In a separate bowl combine the dry ingredients, then add your date mixture to this bowl and keep whisking until the batter thickens.

  6. Use a spoon to scoop up the batter and place it on the baking tray.

  7. Bake for 20 minutes or until the cookies turn golden.

  8. Pop tray out of the oven and set it aside to cool.
