Eggplant Lentil Stew

Preparation
I sliced up my eggplant into 8 strips and roasted them in my @gowiseusa at 320F for 20 min
I chopped them into 1/2
Thanks to my friend @mybizzykitchen and her gift to me of a new @cuisinart immersion blender I was able to turn those eggplant chunks and caramelized onions into a smooth stew base
Why roast the eggplant? It adds umami! That mythical unicorn of a flavor that everyone talks about
The base of this stew is all umami which pairs with the brightness of the tomatoes and evens out with the coconut milk
