Extra Creamy Classic Vegan Hummus
Ingredients
- 2 cans organic chickpeas
- 1 cup good quality tahini
- Juice of 1 lemon
- Chickpea juice (from one can)
- 3-4 cloves garlic
- 1 tsp salt
- 1 tsp pepper
Preparation
Drain one can of chickpeas, discarding the liquid. Reserve the liquid from the second can of chickpeas.
Blend everything in a high speed blender until smooth and creamy.
Plate the hummus in a shallow bowl.
Decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper.
Serve with warm pita bread.
