Extra Creamy Classic Vegan Hummus

Ingredients

  • 2 cans organic chickpeas
  • 1 cup good quality tahini
  • Juice of 1 lemon
  • Chickpea juice (from one can)
  • 3-4 cloves garlic
  • 1 tsp salt
  • 1 tsp pepper

Preparation

  1. Drain one can of chickpeas, discarding the liquid. Reserve the liquid from the second can of chickpeas.

  2. Blend everything in a high speed blender until smooth and creamy.

  3. Plate the hummus in a shallow bowl.

  4. Decorate with chopped purple onions, roasted chickpeas, cherry tomatoes, parsley, lemon wedges, and crushed red pepper.

  5. Serve with warm pita bread.
