Ginger Black Bean Bowl with Creamy Sriracha Dressing

Ingredients

Creamy ginger sriracha sauce

  • 2-3 tbsp tahini
  • 1/2 tsp ginger powder
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 2-3 tsp sriracha
  • 2 tsp maple syrup
  • Pinch of salt
  • Pinch of white pepper
  • Juice of half a lime
  • 2-3 tbsp water

Bowl

  • 2 tsp olive oil
  • 1 shallot
  • 3 cloves garlic
  • 1 inch ginger
  • 2 (15 oz) cans black beans
  • 2 cups spinach
  • 2 tsp soy sauce or coconut aminos
  • Pinch of white pepper
  • Pinch of salt
  • Cilantro

Preparation

  1. Warm olive oil in a pan and sauté shallots until softened

  2. Add garlic and ginger and sauté until fragrant

  3. Add black beans and sauté for 3-5 minutes, then add spinach and soy sauce, and allow spinach to wilt

  4. Whisk together all sauce ingredients until smooth, adding water slowly to reach desired consistency

  5. Pour the dressing over the bowl and serve
