Homemade Pesto Sauce with Fresh Garden Greens
Ingredients
- Green leaves (such as spinach, chard, herbs, beetroot leaves)
- 1-2 garlic cloves
- Handful of almonds
- Olive oil
- Handful of tomatoes (optional)
- Lemon juice (optional)
- Fresh herbs (optional)
Preparation
Fill your food processor with green leaves.
Chop and cook 1-2 garlic cloves, then add to the food processor or keep whole if preferring raw garlic.
Add a handful of almonds and a good amount of olive oil, then blend until smooth.
Optionally, add tomatoes, lemon juice, and fresh herbs for additional flavor.
Serve the pesto with pasta, use it on pizza, freeze in portions for later use, or incorporate into casseroles, lasagne, or as a dip.
Enjoy the pesto with meat, fish, or tofu as a topping.
