Hydrating High Protein Cucumber Salad
Ingredients
- 2 large english cucumbers (organic, preferably)
- 1/2 red onion, very thinly sliced
- 1/3 cup packed chopped fresh cilantro or mint
- 1/4 cup chopped peanuts
- 1 large jalapeño pepper, minced - remove seeds if you'd like less heat
Dressing
- 1/4 cup fresh lemon juice
- 1/4 cup of rice vinegar
- 1/4th tsp garlic powder
- Himalayan Salt, to taste
Preparation
Chop up all salad ingredients.
In a separate bowl, mix the dressing ingredients.
Pour the dressing over the salad ingredients and mix well.
Enjoy the salad!

Peanuts contain 10g of protein per 1/4 cup, making this salad a great high-protein option.
