Hydrating High Protein Cucumber Salad

Ingredients

  • 2 large english cucumbers (organic, preferably)
  • 1/2 red onion, very thinly sliced
  • 1/3 cup packed chopped fresh cilantro or mint
  • 1/4 cup chopped peanuts
  • 1 large jalapeño pepper, minced - remove seeds if you'd like less heat

Dressing

  • 1/4 cup fresh lemon juice
  • 1/4 cup of rice vinegar
  • 1/4th tsp garlic powder
  • Himalayan Salt, to taste

Preparation

  1. Chop up all salad ingredients.

  2. In a separate bowl, mix the dressing ingredients.

  3. Pour the dressing over the salad ingredients and mix well.

  4. Enjoy the salad!

Tips

  1. Peanuts contain 10g of protein per 1/4 cup, making this salad a great high-protein option.
