Refreshing Cucumber Sunomono Salad

Ingredients

  • 3 Japanese or 4 Persian cucumbers
  • 1/4 tsp Himalayan salt
  • 3 Tbsp rice vinegar
  • 1/4 tsp Tamari soy sauce (gluten free)
  • 1 tsp sesame seeds
  • OPTIONAL: add sugar as desired

Preparation

  1. Slice cucumbers as thin as you can. Stir in salt, and let it sit for 5 minutes.

  2. Squeeze water out from cucumbers.

  3. In a small bowl, mix rice vinegar, sugar, and soy sauce together until mixed together (add sugar here if desired).

  4. Add vinegar mixture and sesame seeds to prepared cucumbers and mix well.
