Soba Noodles with Steamed Vegetables and Sweet Tamari Dressing
Ingredients
- 1 pack soba noodles
- 1 bunch broccoli, trimmed and cut into florets
- 1 cup chopped mushrooms
- 100 g baby corn
- 1 small red capsicum, chopped
- buckwheat sprouts for serving
- fresh cilantro for serving
Dressing
- 1/2 cup fresh orange juice (from about 1 large orange)
- 3 tbsp Tamari
- 1 tbsp maple syrup
- 1 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 3 tbsp sesame seeds
Preparation
To make the dressing, combine all the ingredients in a glass jar with a lid, give it a good shake and set aside.
Steam vegetables for about 6 minutes.
Cook noodles according to the package directions.
In a large bowl combine cooked noodles with veggies and spoon over the dressing.
Garnish with cilantro and buckwheat sprouts.
Serve immediately and enjoy.
