Soba Noodles with Steamed Vegetables and Sweet Tamari Dressing

Ingredients

  • 1 pack soba noodles
  • 1 bunch broccoli, trimmed and cut into florets
  • 1 cup chopped mushrooms
  • 100 g baby corn
  • 1 small red capsicum, chopped
  • buckwheat sprouts for serving
  • fresh cilantro for serving

Dressing

  • 1/2 cup fresh orange juice (from about 1 large orange)
  • 3 tbsp Tamari
  • 1 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 3 tbsp sesame seeds

Preparation

  1. To make the dressing, combine all the ingredients in a glass jar with a lid, give it a good shake and set aside.

  2. Steam vegetables for about 6 minutes.

  3. Cook noodles according to the package directions.

  4. In a large bowl combine cooked noodles with veggies and spoon over the dressing.

  5. Garnish with cilantro and buckwheat sprouts.

  6. Serve immediately and enjoy.
