Sautéed Vegetables with Cauliflower Rice and Fried Egg
Ingredients
- 1 small shallot
- mushrooms
- zucchini
- avocado oil
- 1.5 cups cauliflower rice
- 1 tablespoon tamari or soy sauce
- 1 teaspoon toasted sesame oil
- 1/2 cup spinach
- egg
- lemon juice
- sesame seeds
Preparation
In a pan, sauté 1 small shallot, mushrooms, and zucchini with a little bit of avocado oil.
Once the veggies are almost cooked, add about 1.5 cups cauliflower rice and combine.
Then add 1 tablespoon tamari or soy sauce and 1 teaspoon toasted sesame oil, add about 1/2 cup spinach and combine.
Fry an egg and serve on the side.
Add a splash of lemon juice to your rice and sprinkle with sesame seeds. Enjoy!
