Sautéed Vegetables with Cauliflower Rice and Fried Egg

Ingredients

  • 1 small shallot
  • mushrooms
  • zucchini
  • avocado oil
  • 1.5 cups cauliflower rice
  • 1 tablespoon tamari or soy sauce
  • 1 teaspoon toasted sesame oil
  • 1/2 cup spinach
  • egg
  • lemon juice
  • sesame seeds

Preparation

  1. In a pan, sauté 1 small shallot, mushrooms, and zucchini with a little bit of avocado oil.

  2. Once the veggies are almost cooked, add about 1.5 cups cauliflower rice and combine.

  3. Then add 1 tablespoon tamari or soy sauce and 1 teaspoon toasted sesame oil, add about 1/2 cup spinach and combine.

  4. Fry an egg and serve on the side.

  5. Add a splash of lemon juice to your rice and sprinkle with sesame seeds. Enjoy!
