Stir-Fried Noodles with Veggies

Ingredients

  • 1 package noodles of choice, cooked
  • 1 cup of shredded veggies of your choice*
  • 1/2 cup sliced mushrooms
  • 1 tbsp tamari
  • 1 tbsp maple syrup
  • 1 tbsp Sriracha
  • 1 tbsp rice vinegar
  • 2 tbsp mushroom broth
  • 1/4 tsp garlic powder
  • 1/4 tsp ginger powder
  • 1/4 tsp cornstarch

Preparation

  1. In a small bowl whisk together tamari, Sriracha, vinegar, maple syrup, mushroom broth, garlic, ginger and cornstarch then set aside.

  2. Add mushrooms to pan and sauté until fully cooked.

  3. Add in vegetables, add a pinch of salt and sauté for about 2-4 minutes.

  4. Add in noodles then pour over sauce.

  5. Sauté and stirring continuously allowing sauce to thicken and coat noodles.

  6. Remove from heat once liquid has all thickened.
