Jammy Chocolate and Coconut Cookies

Ingredients

  • 1/4 cup UFC Velvet coconut milk
  • 1/4 cup coconut oil, melted
  • 2 tbsp maple syrup
  • 1/2 cup desiccated coconut
  • 1/2 cup ground almonds
  • 1/2 cup coconut flour
  • 2 tsp raspberry or strawberry jam
  • 100g chocolate of choice, melted

Preparation

  1. In a bowl, mix together the desiccated coconut, coconut flour and ground almonds.

  2. Add the maple syrup, coconut milk, coconut oil, and jam. Use your hands to combine the mixture and mold it into 6-8 cookies depending on the size you want.

  3. Lay the cookies out on baking paper on a baking tray and leave to chill in the fridge for 30 minutes.

  4. Melt the chocolate.

  5. Cover the cookies in the melted chocolate and place them back on the tray to cool in the fridge for at least an hour.
