Quick and Easy Snickerdoodle Mug Cake

Ingredients

  • 4 tbsp white wheat flour or oat flour
  • 1 1/2 tbsp sugar in the raw
  • 1/4 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp cream of tartar
  • Pinch of salt
  • 2 tbsp cashew butter or almond butter or tahini or sunflower seed butter
  • 1/4 cup unsweetened almond milk

Sugar cinnamon coating

  • 1 tsp sugar
  • Pinch of cinnamon

Preparation

  1. In a mug, combine dry ingredients and stir well to combine.

  2. Add nut or seed butter and milk and stir to create a smooth batter.

  3. Keep sides of mug clean by scraping batter off sides as needed.

  4. Combine sugar and cinnamon for topping and sprinkle as much overtop as desired.

  5. Place mug in microwave for 1 minute, stopping halfway through to check on the cake.

  6. Cook for an additional 15 seconds and the cake should be fully cooked.

  7. Remove from microwave and allow to cool before taking a bite.

Oven method

  1. Place batter in an oven-safe dish and bake in the oven at 350°F for 8-10 minutes or until completely cooked.
