Chocolate Pumpkin Pie Mug Cake

Ingredients

  • 3 tbsp plain flour
  • 1 tbsp cacao powder
  • 2 tbsp sugar or sweetener (e.g., erythritol)
  • 1/4 tsp baking powder
  • 1 tbsp canned or pureed pumpkin
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/2 tsp apple cider vinegar
  • 3 tbsp non-dairy milk (e.g., soy milk)
  • 1/2 tsp oil

Preparation

  1. Mix all the ingredients together in a microwave-proof mug.

  2. Cook in the microwave on full power for 1.5 minutes.

  3. Optionally, top with yogurt and chocolate hazelnut spread for added flavor.
