Spicy Corn Fritters
Ingredients
- 2 fresh ears of corn
- 1/2 a red pepper
- 1 jalapeno
- 1/3 cup cilantro
- 3/4 cup almond milk
- 2 eggs
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1 tsp sea salt
- 1 tsp baking powder
- 1 cup all-purpose flour
Preparation
Remove corn from the cob using a sharp knife
Finely dice red pepper, jalapeno and cilantro
Combine veggies in a large bowl with almond milk and whisked eggs
Combine flour and spices in another bowl
Add dry to wet ingredients and mix until well incorporated
Heat a large skillet and once hot add avocado oil or vegetable oil
Scoop batter using a 1/4 cup and cook each fritter 3 minutes per side
Continue to do this in batches, using the oven to keep the cooked ones warm
Serving suggestions
Option to serve with sour cream or greek yogurt and a little drizzle of hot sauce
