Spicy Corn Fritters

Ingredients

  • 2 fresh ears of corn
  • 1/2 a red pepper
  • 1 jalapeno
  • 1/3 cup cilantro
  • 3/4 cup almond milk
  • 2 eggs
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1 tsp baking powder
  • 1 cup all-purpose flour

Preparation

  1. Remove corn from the cob using a sharp knife

  2. Finely dice red pepper, jalapeno and cilantro

  3. Combine veggies in a large bowl with almond milk and whisked eggs

  4. Combine flour and spices in another bowl

  5. Add dry to wet ingredients and mix until well incorporated

  6. Heat a large skillet and once hot add avocado oil or vegetable oil

  7. Scoop batter using a 1/4 cup and cook each fritter 3 minutes per side

  8. Continue to do this in batches, using the oven to keep the cooked ones warm

Serving suggestions

  1. Option to serve with sour cream or greek yogurt and a little drizzle of hot sauce
