Spirulina & Peanut Butter Popcorn Clusters

Ingredients

  • 2 tablespoons vegan butter
  • 1/4 cup organic peanut butter
  • 1/4 cup raw honey or maple syrup (for a vegan option, more if necessary)
  • 4 cups popped popcorn
  • 1/2 cup semi-sweet vegan chocolate
  • 1 packet of spirulina

Preparation

  1. Heat the vegan butter, peanut butter, and honey (or maple syrup) in a small saucepan over medium heat for 1 to 2 minutes, stirring regularly, until all ingredients are combined.

  2. Combine the popcorn and peanut butter mixture in a large bowl. Use your hands, if needed, to ensure the popcorn is well coated. Spread the popcorn on a baking sheet lined with parchment paper.

  3. Sprinkle the peanut butter popcorn with the spirulina powder.

  4. In a small saucepan, melt the dark chocolate over low heat. Drizzle the melted chocolate over the popcorn.

  5. Refrigerate the popcorn clusters for 20 minutes. Then, break the popcorn into clusters and serve.
