Summer Rolls with Homemade Peanut Sauce

Ingredients

  • brown rice paper
  • shelled edamame
  • cucumber
  • carrots
  • bean sprouts
  • teriyaki tofu
  • rice noodles
  • green onions

Peanut sauce

  • 2 tablespoons peanut butter
  • 2 teaspoons lime juice
  • 2 teaspoons soy sauce
  • a splash of water

Preparation

  1. Dampen the brown rice paper.

  2. Fill it with shelled edamame, cucumber, carrots, bean sprouts, teriyaki tofu, rice noodles, and green onions.

  3. Roll it up and enjoy.

  4. Combine 2 tablespoons peanut butter, 2 teaspoons lime juice, 2 teaspoons soy sauce, and a splash of water to make the peanut sauce.
