Fresh Vegetable Spring Rolls with Peanut Sauce

Ingredients

  • brown rice noodles
  • cucumber
  • spring mix
  • baked tofu
  • carrots
  • bell peppers

Peanut sauce

  • 2 tablespoons peanut butter
  • 2 teaspoons soy sauce
  • 2 teaspoons maple syrup
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ginger powder
  • water (to thin)

Preparation

  1. In a bowl, combine 2 tablespoons peanut butter, 2 teaspoons soy sauce, 2 teaspoons maple syrup, 1/2 teaspoon garlic powder, and 1/4 teaspoon ginger powder to make the peanut sauce.

  2. Gradually add water to the peanut sauce and mix until it reaches the desired consistency for dipping.

  3. Prepare the spring roll fillings by arranging brown rice noodles, cucumber, spring mix, baked tofu, carrots, and bell peppers

  4. Wrap the fillings in spring roll wrappers and roll them up, similar to wrapping a burrito
