Veggie Salad with Peanut Dressing and Chickpeas
Ingredients
Salad base
- 1 bag salad mix (a crunchy mix with cabbage works well)
- 1/4 cup shredded carrots
- Handful diced cilantro
- 1/4 shallot, minced
- 3-4 servings of protein of your choice (I used 1 can rinsed and drained chickpeas)
- Pinch of salt
- Juice of 1/2 a lime
Peanut dressing
- 2 tbsp peanut butter (or other nut/seed butter)
- Juice of half a lime
- 2 tsp soy sauce
- 1/2 tsp garlic powder
- 1/2 tsp ginger powder
- 2 tsp maple syrup
- 2 tsp hot sauce
- 2-3 tbsp water
Preparation
Add salad base ingredients except protein to a bowl and toss together.
In a separate bowl, combine dressing ingredients and mix together until smooth (feel free to add a little more water if you want the dressing thinner).
Pour dressing on top of salad ingredients and with hands “massage” into greens to help break them down and soften a little.
Add in protein and toss together before serving.
