Sweet Potato Toasts with Tofu Egg and Avocado

Ingredients

  • Sweet potatoes
  • Avocado
  • 1 carton silken tofu
  • 3/4 teaspoon black salt
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper

Preparation

  1. Toast the sweet potatoes in a toaster or bake them on a baking sheet in the oven at 200°C for about 25 minutes without preheating the oven.

  2. For the tofu egg mixture, place the silken tofu in a bowl and cut it into very small pieces with a knife.

  3. Add 3/4 teaspoon black salt, 1/2 teaspoon turmeric, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper to the tofu and mix well thoroughly.

  4. This dish is a great source of protein and carbs, making it an excellent post-run lunch option.
