Sweet Potato Toasts with Tofu Egg and Avocado
Ingredients
- Sweet potatoes
- Avocado
- 1 carton silken tofu
- 3/4 teaspoon black salt
- 1/2 teaspoon turmeric
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Preparation
Toast the sweet potatoes in a toaster or bake them on a baking sheet in the oven at 200°C for about 25 minutes without preheating the oven.
For the tofu egg mixture, place the silken tofu in a bowl and cut it into very small pieces with a knife.
Add 3/4 teaspoon black salt, 1/2 teaspoon turmeric, 1/2 teaspoon garlic powder, and 1/4 teaspoon black pepper to the tofu and mix well thoroughly.
This dish is a great source of protein and carbs, making it an excellent post-run lunch option.
