Vegan Banana Oat Flour Pancakes

Ingredients

  • 1/2 cup almond milk
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon baking powder
  • 1/2 mashed banana
  • 70 grams oat flour
  • 1/2 tablespoon ground flax
  • sprinkle of cinnamon

Preparation

  1. Whisk together the almond milk, lemon juice, and baking powder, then set aside for 10 minutes to make buttermilk.

  2. Fold in the mashed banana, oat flour, ground flax, and cinnamon, then set aside for 5 minutes.

  3. Cook on medium heat, wait for bubbles to form before flipping gently, and cook for 2-3 minutes on the other side.

  4. Plate with berries, nut butter, and maple syrup.
