Vegan Cardamom-Chocolate Pinwheel Treats

Ingredients

  • Almond Flour - 1 cup
  • Coconut Milk Powder - 1 cup
  • Icing Sugar - 1/2 cup
  • Cardamom Powder - 1/2 tsp
  • Soy Milk - 1/4 cup
  • Cacao Powder - 2 tbsp
  • Coconut Oil - 2 tbsp

Preparation

  1. In a mixing bowl, combine almond flour, coconut milk powder, icing sugar, cardamom powder, and coconut oil. Crumble the mixture together.

  2. Gradually add soy milk and knead the mixture to form a dough.

  3. If making two flavors, divide the dough and add cacao powder to one portion.

  4. Flatten each dough separately using a rolling pin on a baking sheet.

  5. Layer the chocolate-flavored dough on top of the white dough.

  6. Roll the layered dough with the help of baking paper, creating a pinwheel pattern. Make the roll as large as desired.

  7. Place the rolled dough in the fridge for 15 to 20 minutes to set.

  8. Once chilled, remove from the fridge and cut into pieces.

  9. Serve the pinwheel treats or store them in an airtight container in the fridge for weeks.
