Air-Fried Mac and Cheese Bites

Ingredients

  • 1 box EatBanza Chickpea Mac (white cheddar shells)
  • 1/2 cup Gluten-free panko
  • 1 egg

Preparation

  1. Prepare the Chickpea Mac according to the directions on the EatBanza box.

  2. Once cooked, pour the pasta onto a plate or in a bowl and refrigerate for 30 minutes to cool.

  3. Once cooled, scoop the pasta into bites (press the pasta tightly into a cookie scoop to make 8 bites) and freeze for 1 hour.

  4. Once frozen, dip each bite in the whisked egg, then coat with the panko crumbs and air-fry at 400°F for 8-10 minutes. You can also use an oven, but it will take a little longer to crisp.
