Easy Homemade Brazilian Cheese Biscuits

Ingredients

  • 70 grams grated coalho cheese or Minas cheese (avoid mozzarella or prato cheese as they melt too much and may cause deformation)
  • 15 grams grated parmesan cheese
  • 35 grams heavy cream
  • 63 grams sour tapioca starch or sweet tapioca starch
  • Salt to taste
  • 1 large egg, plus additional as needed

Preparation

  1. Break the egg and mix well, then set aside

  2. Mix the cheeses, tapioca starch, and heavy cream

  3. Gradually add the beaten egg, 1 teaspoon at a time, until the dough is firm and does not stick to your hands

  4. Take a portion of the dough, form a small ball, then roll into a snake. Fold the snake into a horseshoe shape

  5. Bake on a greased baking sheet at 180Β°C (350Β°F) for 20 minutes or until golden
