Easy Oven-Baked Veggie Fries with Dips

Ingredients

  • Celeriac
  • Smoked paprika
  • Carrots
  • Pomegranate seeds
  • Vegan cheese
  • Sweet potatoes
  • Olive oil
  • Spices of choice
  • 1/2 cup vegan mayonnaise
  • 1 tsp sriracha
  • 1 avocado
  • Fresh lemon juice
  • Salt
  • Pepper

Preparation

  1. Cut the celeriac, carrots, and sweet potatoes into fry shapes; cut carrots in halves if needed.

  2. Drizzle the cut veggies with olive oil and sprinkle with spices of your choice.

  3. Place them on a baking sheet.

  4. Bake in the oven at 350 F or 180 C for 25-35 minutes.

  5. For sriracha-mayonnaise dip: Mix 1/2 cup vegan mayonnaise with 1 tsp sriracha and a little olive oil.

  6. For carrot fries topping: Crumble vegan cheese on top and sprinkle pomegranate seeds.

  7. For avocado dip: Mash 1 avocado and mix it with olive oil, pepper, salt, and fresh lemon juice.
