Homemade Vegan Nandos
Ingredients
- 1 XL sweet potato
- tofu (i had smoked tofu)
- nando’s peri peri sauce (i used medium)
- peas
- sweetcorn
- carrot sticks
- rocket salad
- tahini
Preparation
I just peeled & chopped the potato and steamed it for about 15 mins, until soft, and mashed it with some unsweetened plant milk & salt
Meanwhile, i boiled the veg and sautéed the tofu in the peri peri sauce
Then i plated it all up, drenching the whole bowl in tahini (tahini is the LOML and is just the match made in heaven with the sweet potato and also perfect with anything spicy or just anything tbh so this was a definite combo i’d recommend to anyone
