Roasted Veg Sheet Pan Dinner

Ingredients

  • oasted cauliflower
  • multicolored carrots
  • sweet potato & crispy chickpeas over jasmine rice with a creamy miso lemon tahini sauce ? so easy to throw all this veg in the oven
  • meanwhile cook the rice
  • make the sauce

Preparation

  1. Preheat oven to 425°F

  2. Dice 4 small sweet potatoes? cut one head of cauliflower into florets? & prep 1/2 bag carrots? toss these all in a drizzle of olive oil, garlic powder, smoked paprika & s+p, then throw into the oven on a silicone baking sheet for 15 mins

  3. Meanwhile, get started on the rice & rinse+drain 1 can chickpeas, patting completely dry

  4. Once the veg hit the 15 min mark, add in the chickpeas (I used like 3 diff baking dishes to prevent overcrowding lol) & bake together for another 15-20 mins until all soft & chickpeas crispy! ✨for the tahini sauce mix together: 3 tbsp tahini, 1 juiced lemon, 1 tbsp miso paste, garlic powder, umami seasoning, s+p & hot water to thin
