Vanilla Chia Pudding with Berry Nice Cream

Ingredients

  • 2 tablespoons chia seeds
  • 1/2 teaspoon vanilla
  • 1 cup almond milk
  • 1/2 large banana
  • 1 tablespoon almond butter
  • 1 cup frozen or fresh berries
  • dark chocolate for drizzle

Preparation

  1. Soak 2 tablespoons chia seeds and 1/2 teaspoon vanilla in 1 cup almond milk; refrigerate overnight.

  2. Slice 1/2 large banana and freeze it.

  3. The next day, blend the frozen banana slices with 1 tablespoon almond butter, a little almond milk, and 1 cup frozen or fresh berries.

  4. Serve the chia pudding and the blended nice cream together, drizzled with a little dark chocolate.
