Banana Cream Chia Pudding

Ingredients

  • 1 can of full-fat organic coconut milk
  • 1/4 cup chia seeds
  • 1 banana + extra (for topping)
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla
  • unsweetened shredded coconut (for topping)

Preparation

  1. Blend coconut milk, 1 banana, 1 Tbsp maple syrup and 1/2 tsp vanilla in a blender until smooth

  2. Pour into a bowl and stir in 1/4 cup chia seeds

  3. Cover and refrigerate for 2 hours so it can formulate into a gel

  4. Serve with sliced banana and 1 tsp unsweetened shredded coconut on top

  5. Enjoy
