Banana Cream Chia Pudding
Ingredients
- 1 can of full-fat organic coconut milk
- 1/4 cup chia seeds
- 1 banana + extra (for topping)
- 1 tbsp pure maple syrup
- 1/2 tsp vanilla
- unsweetened shredded coconut (for topping)
Preparation
Blend coconut milk, 1 banana, 1 Tbsp maple syrup and 1/2 tsp vanilla in a blender until smooth
Pour into a bowl and stir in 1/4 cup chia seeds
Cover and refrigerate for 2 hours so it can formulate into a gel
Serve with sliced banana and 1 tsp unsweetened shredded coconut on top
